At your next gathering, make this easy, healthy, and delicious appetizer, courtesy of 50 Great Appetizers (Andrews McMeel Publishing, LLC, 2008), from which this recipe is excerpted.
Ingredients:
50 Great Appetizers (Andrews McMeel Publishing, LLC, 2008)
6 ounces assorted heirloom tomatoes, diced
2 tablespoons extra-virgin olive oil, plus more for drizzling
5 leaves fresh basil, cut into fine shreds
Salt and freshly ground pepper
1 loaf country bread, sliced 1/2 inch thick
4 cloves garlic, peeled
Directions:
1. In a bowl, combine the tomatoes, the 2 tablespoons olive oil, and the basil. Season with salt and pepper to taste. Set aside.
2. Grill or toast the bread slices on both sides. Remove from the heat and rub immediately with the garlic. Place on a serving platter, top with the tomato mixture, and drizzle with olive oil.
